Ingredients

  • 4 cl Garlic
  • 2" Ginger
  • 2 Chillis
  • 1 t Cumin
  • 1/2 t Coriander
  • 1/2 t Chilli powder
  • 2 t Curry powder
  • 1 t Garam masala
  • 1 c Lentils
  • 2 c Stock
  • 400 g Tomatoes
  • 400 mL Coconut cream
  • 3 T Almond butter
  • 1/2 Lemon
  • 1/2 c Parsley

Based on Rainbow Plant Life’s Red Lentil Curry.

Instructions

  1. {"Mise en place"=>"Mince 4 cl garlic, 2\" ginger, 2 chillis."}
  2. {"Mise en place"=>"Combine 1 t cumin, 1/2 t coriander, 1/2 t chilli powder, 2 t curry powder, 1 t garam masala."}
  3. Sauté garlic mix in oil until fragrant.
  4. Add spice mix and cook until fragrant.
  5. Add 2 c stock, 1 c lentils, 400 g tomatoes. Simmer covered until lentils are cooked (20-25 minutes).
  6. Add 400 mL coconut cream, 3 T almond butter, black pepper, and simmer uncovered until thickened.
  7. Add juice of 1/2 lemon and parsley.
